The 2021 La Pantera Rosa, a pale rosé, was produced from old-vine Garnacha from Cebreros and fermented in concrete, where it matured for eight months with lees. It was bottled a little later with more time with lees, which gives it a different tactile sensation, more serious than what the image might suggest. It has a balsamic nose with a note of bay leaf and a touch of camphor, white fruit and flowers (jasmine), pungent flavors, very good freshness and acidity. It makes you salivate and is dangerously easy to drink. 6,500 bottles were filled in September 2022.
